Here is a recipe from Penbryn - a beautiful coastal village in the county (and one time Kingdom,) of Ceredigion in Mid West Wales. Penbryn has probably the most unspoilt beach of the entire Ceredigion coast, with no buildings, beach huts or commercial enterprises (not even an ice-cream kiosk) to be seen along the entire mile long beach.

Penbryn Cheese Pudding (Pwdin Caws Penbryn)

The little village of Penbryn is not just known for it's beautiful beach, it also has another claim to fame - Pwdin Caws Penbryn (Penbryn Cheese Pudding,) is a traditional Welsh savoury pudding.

The base consists of egg custard, flavoured with mustard, cheese and breadcumbs and is oven baked to a golden brown. It is best served with fresh, warm, crusty bread

What you will need:

Ingredients for Cheese Pudding

  • 4 oz cheddar cheese
  • 2 eggs
  • 1/2 pint milk
  • 3 oz fresh breadcrumbs
  • 1 oz butter
  • Salt and pepper
  • Pinch of dry mustard


How to do it:

Method:

Before you begin, set your oven to Gas Mark 4 (350F) and this will allow it to pre-heat as you prepare the rest of the recipe.

Separate the egg whites from the yolkes. Lightly beat the yolkes together in a mixing bowl. Slightly warm the milk, and add it to the beaten eggs along with the butter and mustard.

Mix well, and during the mixing, add the breadcrumbs, cheese and some seasoning.

Whip the egg whites until stiff, and fold it gently into the mixture, retaining as much of the "fluffiness" as possible.

Pour the mix into a pre-buttered dish. Cover the surface of the mix with more cheese and cook for approx 30-40 minutes. It is ready when the pudding has risen well, is golden brown in colour and is set in the middle.

... and eat it!

The pudding is delicious and cheesy and ready for eating either immediately, or when it has cooled. As mentioned above, it goes particularly well with fresh crusty bread.

The quantities given should be ample for between four to six servings.
